This Garlic and Lime Prawn Salad is refreshing, fruity and citrusy! Mixed lettuce, tossed with mango and cucumber chunks and a citrusy honey lime vinaigrette. If you like prawns and citrus flavours this salad will not disappoint!

This salad is soo good seriously you have to try it! It is perfect for an easy dinner recipe or a delicious quick lunch ready in just 20 minutes!

What do i need?
Juicy prawns! Today I have used large tail on prawns because they are big and juicy and I like the way they look! I always have a bag of frozen prawns in my freezer for recipes like this! I buy mine from Costco or Wing Yip.
For the prawn marinade you will need, lime, coriander, garlic, cayenne pepper and olive oil.
What lettuce? I like to use a mix. Today I have used some red romaine, and leafy green lettuce.
Mango and cucumber chunks are a must for this recipe. Make sure your mango is ripe!
Honey Lime Vinegrette –
This dressing is super easy to make and you probably have everything in your pantry already! In a jar add:
2 tbsp olive oil;
1 tbsp honey;
juice of half a lime;
squeeze of siracha; and
salt and pepper!
The garlic and lime butter prawns and Honey and Lime dressing are what make this salad. Be sure to follow the recipe closely for an incredible combination of flavours!

Ingredients
Garlic and Lime Prawns
10-20prawns
1tbspolive oil
2garlic cloves
1tbspchopped coriander plus stalks
1juice of 1 lime
pinch cayenne pepper
The Salad
1cupmixed salad
½cupmango chunks
½cupcucumber chunks
Honey Lime Dressing
2tbspolive oil
1tbsphoney
1tbsplime juice
1tspsiracha
pinch of salt
pinch black pepper
Instructions
Garlic and Lime Prawns
In a bowl add all the marinade ingredients. Add the washed, deveined prawns and combine well. Leave to marinate for 15 minutes.
In a pan on high heat add a knob of butter, once slightly melted add the entire contents of the bowl and fry for 2 minutes before turning. Fry for further 2-3 minutes until prawns are pink and curled.
Set aside and keep the butter.
The Salad and Honey Lime Dressing
Wash your salad and dry in the salad spinner. Cut cucumber and mango into desired chunks and set aside.
Add all the dressing ingredients to a jar and shake well.
Add the salad to a plate, top with mango and cucumber, drizzle over the honey lime dressing, top with prawns and enjoy!
Notes
TIPS – Do not overheat your pan before adding the butter you don’t want to burn the butter. Add the prawns into a hot pan with butter and turn down if necessary. Make sure your mango is nice and ripe!
