What is Harissa?

Harissa is a North African spicy chilli and pepper paste. The main ingredients are Baklouti peppers, roasted red peppers, garlic, olive oil and spices. Spices vary depending on the origin of the harissa. They can include caraway seeds, coriander seeds and cumin.

Tunisia is the biggest exporter of harissa and is made in many different styles all over the country.

Harissa pairs really well with chicken whether wings, whole or breast. Why not give it a try with this recipe!

What Do I Need?

These Harissa Wings are so simple to make and you need only a few ingredients.

  • Chicken Wings – You will of course need these, being the main ingredient of this dish. I like to use organic or corn fed chicken wings. They always have much better flavour and get a crispier skin.

To Season the Wings –

All you need is a bowl and some gloves or a spatula. Add your prepped wings to the bowl with:

  • Cayenne Pepper 1 teaspoon;
  • 1 teaspoon dried garlic;
  • 1 teaspoon black pepper; and
  • 1 tablespoon corn flour.

Mix everything together until the wings are well coated. Chuck the wings in your air fryer basket for 20 minutes at 200°C. Make sure you check and shake halfway.

The Hot Honey Sauce –

While the wings are cooking, use a small frying pan on medium to low heat to ensure you don’t burn the sauce.

  • Harissa – The star of the show! For this recipe I use 2 pastes plus dried harissa for extra flavour and kick! The most affordable and widely available harissa is from La Phare du Cap Bon. Readily available in most supermarkets or on amazon. My favourite and more expensive harissa is also Tunisian and from Les Moulins Mahjoub. This is a fresh harissa to be kept in the fridge after opening. It is garlicky, citrusy and spicy! Seriously it is so good and worth the price!
  • Honey – Use a good quality liquid honey. This will add some sweetness to the very spicy sauce.
  • Lemon Juice – You will need the juice of half a lemon. You can also use a good quality bottled lemon juice.
  • Olive Oil or Butter – The choice is yours and both are equally delicious.
  • Garlic – What recipe is complete without it am I right? I love garlic and use 3-4 cloves.
  • Salt & Pepper – Just before removing the sauce from the heat taste for seasoning and season to your taste.

Tips & Tricks

  • Be sure to use the corn flour if you want extra crispy wings.
  • If you don’t have an air fryer you can bake in an over at 180°C for 30 minutes then turn up the heat to 200°C degrees for 10 more minutes.
  • Wash and prep your chicken by rinsing in lemon juice and separating the drums from the flats. I also remove the wing tip to speed up cooking time.
  • Taste your sauce before seasoning at the end for best results.
  • Bring out the chicken wings from the fridge 20 minutes before you intend to start cooking. This will speed up cook time.

Equipment

  • Garlic Presse
  • Small frying pan
  • Air Fryer
  • 2 Mixing bowls

Ingredients

  • 10 chicken wings drums and flats

Dry Rub

  • 1 tbsp corn flour
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp dried garlic

Hot Honey Harissa Sauce

  • 1 tsp olive oil
  • 4 cloves garlic
  • 1 tbsp fresh harissa
  • ¼ tsp harissa powder
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  • Wash and prep the chicken wings and cut into drums and flats. Pat dry with kitchen roll and add to a bowl.
  • In a small bowl add the corn flour and dry rub ingredients mix and add to the chicken wings. Mix together well using your hand or a silicone spatula.
  • Add seasoned wings to the air fryer basket and cook at 200°C for 20 minutes. Open and shake the basket halfway.
  • While the wingd are cooking make the sauce by heating the olive oil and adding the minced garlic.
  • Saute the garlic on medium heat for 2 minutes being careful not to burn.
  • Now add the harissa, lemon juice and honey and stir. When sauce is smooth and bubbling add the seasoning and adjust to your taste.
  • Once the wings are done simply transfer to a large mixing bowl pour on the sauce and toss to coat well.
