These steaks are packed full of flavour and cooked in just the right way to keep the lamb juicy and tender. These steaks are super tasty and packed full of flavour. Marinated in olive oil, garlic, chilli, coriander and dried spices. The end result is a juicy steak full of fragrant flavours.
I love lamb leg steaks and often have them in the freezer. I usually buy my steaks from Costco. The pack is huge so I freeze the steaks in portions of 4 in ziplock bags (also from Costco ;)) Lamb is a very flavourful meat and can sometimes be too strong.Using a pungent marinade like this, helps to balance the flavour of the meat, while still being complimentary.
I Love Coriander!
Coriander can always be found in my fridge, I love it and don’t know how people dislike it. It is definitely my favourite herb, whether cooked or raw. Coriander is a pretty versatile herb, it pairs beautifully with shellfish, fish and lamb. It is also a great addition to curries and soups and works as a great garnish to many dishes!

The fresh ingredients you need are chilli and coriander. I buy my coriander from my local asian green grocer. I use lots of fresh herbs in my cooking and preserving herbs for a long time is important for me. Green grocer herbs come in a tall bunch with long stalks long stalks which is much easier for placing in water.
For the rest of the marinade you will need fresh garlic, cayenne pepper, paprika, turmeric and mixed herbs. Mix together these seasonings with some olive oil and the chopped herbs and chilli and your marinade in ready!
I like to use a good cast iron griddle pan. This enables me to finish off the cook in the same pan in the oven. Alternatively, you can use a heavy frying pan and transfer the lamb to a pyrex dish to finish off in the oven,
Tips & Tricks
Marinades are one of my favourite things to make. I almost always marinade my meat, especially chicken. Even a last minute meal can benefit from a quick but tasty marinade. Just 1 hour in the fridge with some herbs and spices can make a huge difference. I always try to marinade overnight, if you have the time and are planning in advance try and marinade these steaks the night before you make them – you will not regret it!
If you have a meat thermometer, use it to get the perfect cook for you, your guests or family. The internal temperature for medium/well lamb should be 140°F /60°C. I use this one from Thermpro. You can head straight to their website to see their extensive range or they sell most of their products on amazon too. I highly recommend their products if you want something reliable that wont break the bank!
To sear the steaks, place your steaks into a very hot pan. This will help you get a sizzle and a nice brown crust.

Chilli and Coriander Lamb Leg Steaks

Ingredients
4-6lamb leg steaks
50mlolive oil
6garlic
1scotch bonnet or chilli
¼chopped coriander
1tspturmeric
1tspcayenne pepper
1tsppaprika
½tspmixed herbs
½tspsalt
½tspblack pepper
½tspcurry powder
Instructions
Marinade
Wash and chop the coriander and chilli and place in a bowl. Mince the garlic into the bowl and add the olive oil and dried seasonings and combine well.
Wash and trim the steaks to your preference. Dry the steaks with kitchen roll and add to the bowl/Tupperware and mix or shake well. Leave to marinate for at least 1 hour or overnight for the best result.
Cooking
Pre heat your grill/oven to 180°F/82°C.
Put your griddle pan on high heat and heat for about 7-10 minutes. When hot use the tongs to place the steaks in the pan laying them away from you to avoid splash back. Sear for 3-5 minutes on one side then flip.
Sear the other side for a further 3-5 minutes. Using the tongs hold the steak with the fat side facing down and sear for 2-3 minutes.
When all the pieces have been seared on all sides place the griddle pan in the oven to finish cooking for 10-15 minutes or until internal temperature of the steaks is 140°F/60°C, for a medium well cook.
Notes
If you are not using a griddle pan put a little olive oil into the pan right before placing the steaks in the pan. For oven cooking you can use either the oven or grill setting to finish cooking your steaks. The grill will maintain a nice crust to your steaks and the oven will help maintain a juicy centre.
