What Do I Need?
The Chicken Wing Coating –
Good quality fresh chicken wings. You should process the wings by removing the wing tip and cutting the flat away from the drum.
Add rice flour and corn flour to a bowl together with cayenne pepper, paprika, thyme, dried garlic and salt & pepper and mix well.
The Chilli & Lime Glaze –
Honey and Lime are essential ingredients to the sauce. You will use the juice and zest of one lime and a generous helping of honey.
Of course its got to be spicy so we are using Scotch Bonnet a very hot chilli native to South America and West Africa. This chilli is very hot with fruity notes. This is going to give some real heat to your chilli and lime glaze.
Fresh garlic should be minced and sautéed in unsalted butter.
Add paprika and a pinch of salt and black pepper to season the glaze.
How to Make the Chilli & Lime Glaze
In a small saucepan over medium heat add the butter, chilli, and garlic.
Sauté for 1 minute to soften but not brown any of your ingredients. Next add the lime juice and zest, honey and whisk on low heat for 1 minute.
Add the seasoning and taste. When happy with the consistency remove from the heat. You want it runny with a nice shine.
All thats left to do now is toss the wings in the glaze plate and top with chopped coriander serve and enjoy!
Tips & Tricks
Be sure to use the corn flour and rice flour if you want extra crispy wings.
If you don’t have an air fryer you can bake in an over at 180°C for 30 minutes then turn up the heat to 200°C degrees for 10 more minutes.
Wash and prep your chicken by rinsing in lemon juice and separating the drums from the flats. I also remove the wing tip to speed up cooking time.
Taste your sauce before seasoning at the end for best results.
Bring out the chicken wings from the fridge 20 minutes before you intend to start cooking. This will speed up cook time.
How to Cook Your Wings!
Air Fry
Since getting my Ninja 15 in 1 smart cooker I have been air frying all of my chicken wings. The results are just great. It takes just 20 minutes to cook super crispy but juicy chicken wings.
All you do is chuck your prepped wings in the air fryer basket and cook for 20-25 minutes at 200C.

Bake
If you don’t have an air fryer don’t worry you can still make these delicious wings with the same great results – it will just take a little longer.
Simply line a baking tray with foil and place a rack inside the tray and place your wings on the the rack ensuring they don’t touch. Place in a pre heated oven at 180C for 30 minutes then turn the heat to 200C for the last 10 minutes.

Chilli and Lime Chicken Wings

Ingredients
Chicken Wing Coating
500gramschicken wings about 20 separate wings
1tbspcorn flour
1tbsprice flour
1tsppaprika
1tspcayenne pepper
½tspdried garlic
½tspblack pepper
¼tspsalt
Chilli & Lime Glaze
25gramsbutter
¼cuphoney
1scotch bonnet/habanero chilli
2garlic clovesminced
1limejuice and zest of 1 lime
¼tsppaprika
pinch of salt
pinch of black pepper
Instructions
Chicken Wings
Wash and prep your chicken wings by separating the drums from the flats with a sharp knife or meat cleaver and remove the wing tip.
To a bowl add the flours and seasonings for the coating and mix well.
Add the dried and prepped wings to the bowl and toss or use your hands to coat the chicken wings well.
Add the wings to your air fryer basket and drizzle on 1 tablespoon of sunflower or vegetable oil. Close the air fryer and set to 200°C for 20 minutes.
Halfway be sure to open the air fryer and give the basket a toss to ensure even cooking.
Chilli and lime Glaze
Using a grater collect the zest of one lime, when done cut the lime in half, juice and set aside.
In a small saucepan over medium heat add the butter and allow to melt slightly before adding the chilli and garlic. Sauté for 30 seconds to 1 minute to soften but not brown any of your ingredients.
Then add the lime juice, zest and honey and whisk on low heat for 1 minute. Add the salt, pepper and paprika and taste.
The sauce is ready when it is slightly thickened and has a shiny appearance.
When the wings are done add to a large metal bowl add the glaze and toss well to coat.
Notes
TIPS –
Wash your chicken in lemon juice and or vinegar to remove the slimy coating and any strong odour from the chicken.
When cooking the glaze keep the heat low to ensure you dont burn any of the ingredients.
Sprinkle with some optional chopped coriander for extra fresh fragrant flavour!
