Welcome to this new and ongoing series Wing Wednesday! I am a huge chicken wing fan and have so many flavours to share with you. I will be posting a new wing recipe every Wednesday until further notice! Yep, you heard that right – I will be posting WINGS EVERY WEDNESDAY UNTIL FURTHER NOTICE 😉

Last week I kicked off this new ongoing project with Lemon Pepper Wings! These wings are such a popular flavour I just had to give you guys my recipe which includes a homemade Lemon Pepper Seasoning.

Where do Buffalo Wings come from?

Buffalo Wings originated in Buffalo, New York. There are no arguments that Buffalo Wings are a solid part of American cuisine. The wings are un-breaded and usually deep fried or baked before being coated in a spicy sauce made of vinegar, cayenne pepper and butter.

I love the wings both deep fried and baked but baked is obviously healthier and also easier in terms of cooking and all the utensils and ingredients used. My recipe is the baked version.

What do i need?

To make these crispy, spicy chicken wings you will need:

  • Chicken wings as many as you want. For this recipe I made 20 separate wings but the sauce is enough for almost double.
  • Unsalted butter will form an integral part of the sauce. For cooking I recommend using a European style butter. I use this French one. I buy this in Costco.
  • For the heat I use Franks Red Hot original hot sauce and the Buffalo hot sauce. This is the original authentic brand to use for buffalo wings seriously I can’t imagine using anything else. This can be bought in most larger supermarkets. I found some in a large Tesco, Costco also usually sell big size bottles.
  • Spicy food fanatics like me add some original Tabasco sauce for an extra kick! I use the original flavour.
  • Don’t forget to add some garlic, salt and black pepper for extra flavour and seasoning.
  • To crisp up the wings I use a combination of baking powder and corn flour.

Creamy Ranch Dip

Buffalo Wings are traditionally served with a blue cheese or ranch dip. I like to serve mine with a creamy cool ranch dip – it just compliments the buffalo sauce so well! It’s so easy to make and so much better than store bought! The end results are well worth the extra effort. You will be putting this ranch dip on everything! Plus, you get to experiment and adjust all the delicious ingredients to your taste!

You will need:

  • 1 cup mayonnaise;
  • ½ cup sour cream;
  • 1 tablespoon chopped fresh chives;
  • 1 tablespoon chopped fresh dill;
  • chopped fresh parsley 1 teaspoon;
  • cloves garlic;
  • ½ teaspoon garlic powder;
  • ½ teaspoon onion powder;
  • ¼ teaspoon salt; and
  • ¼ teaspoon black pepper.

Put all of the above ingredients into a bowl and whisk until combined. Simply try and adjust to your taste! You can replace the fresh herbs with dry herbs, just bear in mind this does change the flavour. Give both a try to find out your favourite – let me know in the comments!

Lots of recipes use buttermilk too. I tend to leave it out to make the dip less calorific. The butter milk does add extra dairy tang, but trust me the results are so similar. If you are looking to cut your calories just leave it out, you probably wont notice. When I am feeling extra indulgent I simply add a half cup of buttermilk to the recipe.

How Long Does Homemade Ranch Keep in the Fridge?

This homemade Ranch Dip keeps for up to 2 weeks provided you used fresh sour cream and mayo. You can always add a little lemon juice or vinegar to be extra sure. Simply store in an air tight jar in a cold fridge.

Tips & Tricks

  • Wash your chicken and dry thoroughly before adding the flour coating. The dryer the chicken wings are the crispier the results will be.
  • Bake your wings on a rack over a baking tray lined with baking paper to catch the oil. This also helps the wings crisp up properly all over and not just on the top.
  • Use a light coating of corn flour and baking powder for even more crisp. If you love crispy wings use this technique for added crunch.

Serving Suggestion –

Buffalo Wings are traditionally served with a blue cheese or ranch dip and some cut batons of celery, carrot or cucumber! I personally hate celery but I can vouch for cucumber and carrots!

Equipment

  • Rack and baking tray
  • Baking paper
  • 2 metal bowls
  • Small frying pan
  • whisk

Ingredients

  • 20 chicken wings separated
  • 1 tbsp baking powder
  • 1 tsp corn flour

Buffalo Sauce

  • 2 tbsp franks red hot sauce
  • 1.5 tbsp franks buffalo sauce
  • 15 drops tabasco
  • 80 g unsalted butter
  • ¼ tsp black pepper

Ranch Dip

  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 tbsp chopped fresh chives
  • 1 tbsp chopped fresh dill
  • 1 tsp chopped fresh parsley
  • 2 cloves garlic
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

Buffalo Wings

  • Wash and dry the wings thoroughly. Separate the wings into drums and flats using a meat cleaver.
  • In a bowl add the baking powder, cornstarch and some salt and pepper. Coat the wings in the flour mix and lay flat on a baking rack in a tray lined with baking paper.
  • Bake the wings in a pre-heated oven at 180°C for 45 minutes for extra crispy wings.
  • For the sauce heat a frying pan on medium heat and add the butter and garlic. Leave for 30 seconds to a minute before adding the hot sauce, tabasco and black pepper and stir until all the butter has melted.
  • Once the wings are done add to a metal bowl and toss together with the sauce.

Ranch Dip

  • Wash and dry the herbs before finely chopping.
  • To a bowl add the mayonnaise sour cream and the remaining ingredients and whisk until combined.

Notes

TIPS – 
  • Make your buffalo sauce while the wings are cooking and set aside ready for coating when the wings are ready.
  • The flour coating is to help the wings crisp up even more in the oven. You can leave this step put to cut the calories down and still achieve very good results.
  • Keep an eye on your wings while baking and check after 30 minutes.
