Spanish Tapas – Mini Series!

Welcome to the Chilli & Life Spanish Tapas mini series! I have been craving all sorts of delicious delicacies from all over Europe but especially those along the Mediterranean coast! I would usually have travelled to Sicily and France this summer but have been unable to this year!

To cheer myself up and cook some different and new dishes in my kitchen, I made 3 of my favourite tapas this weekend as much as for myself but also to share with you all and anyone else missing the Spanish sun and food this year. Or maybe you just want to know how to make these yummy Spanish tapas at home – why not!

What are Patatas Bravas?

Patatas Bravas means “spicy potatoes” in Spanish and is a dish of fried potatoes served with a spicy tomato sauce and aioli a Mediterranean style garlic mayonnaise.

The potatoes for Patatas Bravas are traditionally deep fried but you can also shallow fry them, bake in the oven or use an air fryer. For this recipe I have shallow fried the potatoes to produce the golden brown crisp potatoes you can see in the pictures. I also sometime bake them for a much healthier version and its just as delicious with just a slightly different texture.

How to make the Patatas Bravas Toppings

Patatas Bravas are one of my favourite Spanish tapas dishes and this recipe will bring the flavours of Spain straight to your kitchen! The recipe is actually really simple and doesn’t take too long to make. This recipe takes just 30 minutes to make start to finish. From peeling the potatoes to making all the delicious toppings.

Bravas Sauce

This delicious tomato sauce is super quick and easy to make and is just gorgeous with the fried potatoes and garlic aioli. To make this delicious sauce you will need:

  • 4 tablespoons of olive oil;
  • 1 brown onion sliced;
  • bayleaf;
  • ½ teaspoon of dried oregano;
  • 1 teaspoon paprika;
  • 1 teaspoon cayenne pepper;
  • garlic cloves minced
  • 2 tablespoons of white wine vinegar – you can use sherry vinegar too.
  • 200 g chopped tinned tomatoes – half the tin; and
  • Salt and pepper to taste

To make the sauce simply:

  1. Heat olive oil in a pan and add the sliced onion, seasonings and bay leaf to the oil and fry until the onions are transluscent. Add the garlic and sauté until soft.
  2. Add the vinegar and allow to cook off. Then add the tomatoes and mix everything together before covering and leaving to come to a boil.
  3. When boiling uncover and leave to reduce to half.
  4. Allow to cool slightly, remove the bay leaf before blending until smooth.

I highly recommend the 3 in 1 blender and food processor from Ninja. It is a life saver in the kitchen and has you covered for all your blending and food processing needs!

Homemade Aioli

This homemade aioli is ready in minutes and makes me feel like I am in Spain or anywhere in the Mediterranean!

  • 3 cloves of garlic – I love garlic so use the right amount for your taste;
  • An egg yolk – coddle your egg if safety is a concern;
  • 1 tablespoon of white wine vinegar;
  • Juice of half a lemon or 2 tablespoons;
  • 1/2 cup of olive oil;
  • 1/2 cup of sunflower oil;
  • 1/4 teaspoon salt; and
  • Pinch of pepper.
  1. In a small food processor combine the egg yolk, garlic, white wine vinegar and lemon juice . Pulse a couple times.
  2. Run the processor continuously while drizzling in the olive oil and watch as the mixture thickens up and turns into mayonnaise.
  3. Add the salt and taste. You can always add more lemon juice or seasonings to your taste.

FlavOil – High Oleic Sunflower Oil

For this recipe I used one of my new favourite oils I recently discovered on instagram. Flavoil is a high oleic sunflower oil perfect for cooking and marinades.

In the aioli recipe substituting half of the olive oil with Flavoil provides the perfect solution. A less calorific and much lighter oil which is odourless and almost tasteless. I also fried the potatoes in this oil and the result is very impressive the potatoes were not greasy and did not have the fried oil taste at all. I have been really impressed by this oil.

Delicious Spice Mix

To finish off the dish I make a delicious spice mix for sprinkling over the fried potatoes. In a small bowl, mix 1 tbsp salt, 1/2 teaspoon smoked paprika, pinch chipotle chilli powder, and pepper to taste. Set aside for sprinkling on the potatoes before topping them with the yummy sauces!

Patatas Bravas Serving Suggestions –

These Patatas Bravas are a popular Spanish tapas and are best enjoyed amongst other delicious tapas dishes. Many of us can’t make it abroad this summer and I for one am missing the Mediterranean flavours. This week I have been making lots of my favourite tapas at home and just had to share these recipes with you all.

Spicy Patatas Bravas

Spicy fried potatoes with a spicy tomato sauce and fresh garlic aioli topped with a smoky spice mix!

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Equipment

  • Heavy frying pan
  • Peeler
  • Chopping board
  • Sharp knife

Ingredients

Bravas Sauce

  • 1 brown onion or shallot
  • 4 tbsp olive oil
  • 1 bay leaf
  • ½ tsp dried oregano
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 3 garlic
  • 2 tbsp white wine vinegar
  • 240 g tinned chopped tomatoes

Garlic Aioli

  • 3 garlic cloves
  • 1 egg yolk
  • 1 tbsp white wine vinegar
  • 2 tbsp lemon juice or to your taste
  • ½ cup olive oil
  • ½ cup sunflower oil
  • ¼ tsp salt
  • pinch of pepper

Patatas/Potatoes

  • 200 g potatoes
  • 1 tbsp salt
  • 1 tsp paprika
  • ½ tsp chilli powder
  • ½ tsp pepper
  • 2 cups sunflower oil

Instructions

  • Add the garlic and fry until soft. Add the vinegar and allow to cook off. Then add the tomatoes and mix everything together before covering and leaving to come to a boil.

Garlic Aioli

  • In a small food processor combine the egg yolk, garlic, white wine vinegar and lemon juice .

  • Add the salt and taste. You can always add more lemon juice or seasonings to your taste.

Patatas

  • Fry the potatoes in sunflower oil heated to 180 °C.
  • Cook for 2-3 minutes each side. Remove from the oil and immediately season with the pre made spice mix to ensure it sticks to the potatoes.
  • Toss the potatoes and the spice mix together and place the potatoes in a serving dish.
  • Top the potatoes with the bravas sauce and homemade aioli and some freshly cut parsley.

Notes

TIPS –
  • Add the spice mix to the potatoes as soon as they are out of the oil to ensure the spices stick to the potatoes.
  • Par boil the potatoes for 5 minutes of so before drying thoroughly and frying if you are using a larger waxier potato.
 
AIOLI – 
  • Aioli is all about personal taste. One clove of garlic is pretty garlicky but if you want to put more or less you can just adjust to your taste.
  • Traditional aioli is made with 100 percent olive oil. That’s pretty intense and indulgent.
  • I sometimes prefer to use a mix of olive and sunflower oil. This keeps the character of the aioli but lightens the flavour somewhat. Just remember do what you like it’s your kitchen!
