Vietnamese Noodle Salad or Bun Bo Xao?

This delicious recipe is my take on the classic Vietnamese Beef Noodle Salad dish -Bun Bo Xao. I have not changed a thing as I like to keep my recipes very authentic. I am a huge Asian food fanatic and this Vietnamese noodle dish is one of my favourites from the region. Now you know what it is, be sure to make this recipe or give it a try the next time you see a Vietnamese restaurant!

What do i need?

Lemongrass Beef –

This beef is honestly to die for! The flavours are citrusy, umami and fishy all at the same time. Be sure to follow the recipe closely for the best results. Simply combine the below ingredients together and add some thinly sliced beef of your choice. I went for a nice ribeye steak I sliced myself.

  • sliced onion and minced garlic;
  • 1 tablespoon oyster sauce;
  • 2 teaspoon minced lemongrass;
  • 1 tablespoon rapeseed oil;
  • 1 tablespoon fish sauce;
  • a teaspoon of coconut sugar; and
  • 1 teaspoon black pepper.

The Salad –

For the salad simply cook the noodles according to the pack instructions and prepare your vegetables into your desired shape. I like to shred my lettuce and julienne the cucumbers and carrots.

  • 200g vermicelli noodles;
  • 1 cup shredded lettuce;
  • julienne cucumbers;
  • julienne carrots;
  • peanuts; and
  • chopped coriander and mint.

Nuoc Cham – Sweet and Spicy Fish Sauce Dressing –

This traditional Vietnamese dressing is called Nuoc Cham a quick and easy vinaigrette made of fish sauce, rice vinegar and chilli. Simply add the below ingredients into a jar shake well and enjoy! Watch out for the spice!

  • 1/4 cup fish sauce;
  • 1/4 rice vinegar;
  • 3 thai chillis chopped;
  • juice of 1 lime about 2-3 tbsp;
  • 1 tablespoon coconut sugar; and
  • a minced garlic clove.

This dressing is very spicy so please watch out and put less chilli if you are unsure! Thai or birds eye chillies are very hot. Be careful when handling hot chillies!

If you like your beef slices thin freeze your steak for about 20 minutes and then slice with a sharp knife!
Always follow the noodle pack instructions and just taste before draining if you are unsure.
Children Friendly adaptation –
  • make a dressing with no chilli. Instead add 1 tsp extra or coconut sugar and some chilli flakes if your child tolerates mild chilli.
