Tips & Tricks

  • Make the mix in a nice sized bowl so you can see what you are doing.
  • Avoid over mixing the filling. Fold mixture together with a spatula until ingredients are combined and stop.
  • Use flat leaf parsley not curly if you can find it.
  • To fry the crab cakes use unsalted butter for beautifully browned bottoms!
  • Bring out the crab cakes at least 10 minutes before cooking so they can come to room temperature.

What do i need?

  • The star of the show Crab! I like to use Chicken of the Sea tinned cooked lump crab. The lump meat is chunky and meaty just what we want for the crab cakes. You can also use good claw meat too, just don’t over mix the filling. This brand is great for crab recipes like these. In the UK you can find them in Costco – seriously sign up!
  • To help bind the cakes we will use Eggs and Mayonnaise.
  • I like to use a combination of these fresh breadcrumbs from Waitrose (my go to brand) and panko breadcrumbs which provide great texture to the cakes.
  • For the seasoning we are going to use Old Bay seasoning a classic American blend of spices perfect for seafood and these crabs cakes! I found a giant bottle in Costco i’m super pleased with!
  • You will also need lemon juice, worstester sauce, dijon mustard and fresh chopped parsley
