Every home cook should know how to cook perfect white rice! I have been making my rice like this as long as I have been making rice. This recipe will give you perfect tasty rice every time! All you need is fresh garlic, rice and vegetable oil. Basmati ready in 10 minutes and long grain in 20!

This style of rice is unusual to most, as it is the Brazilian style of preparing rice. It involves washing your rice, heating a pot and frying sliced garlic before adding the raw rice to the same pot to fry together with the garlic before finally adding cold water and covering. Most people cook rice by adding the rice and water into the pan together at the start. This way is absolutely fine but this style just gives the rice that something extra! The garlic gives a light flavour to the rice, it is not a full on garlic rice just gently flavoured with delicious fragrant garlic!

What Do I Need?

  • Basmati rice – my favourite brand is Tilda Pure Basmati Rice. I have been using this brand forever and the quality is great and the results are perfect every time.
  • Long grain rice – again I like to use Tilda Easy Cook Long Grain Rice. I buy my rice in bulk as it is a staple in my home and worth the extra saving. Check out your local asian hypermarket, they usually always sell 10kg bags. Always buy a brand you know and have tried before, there are lots of dodgy brands out there! Or if you have a Costco membership you’ll be sure to find some there!
  • Garlic – I love garlic, slice the garlic and fry for 2 minutes before adding your washed rice to the pot. This step is everything to this recipe.
  • Sunflower oil or coconut oil – My 2 go to oils for cooking rice, coconut oil is a great choice it gives a little extra flavour to the rice and works surprisingly well for light frying.

I know so many people have rice cooker’s these days but I grew up without one. My mother always cooked rice on the stove and has always done it this way. There are many home cooks who simply don’t have a rice cooker, regardless of whether you have one or not you should know how to cook perfect white rice in a pot – you never know when you might need to!

Do I Need to Wash My Rice?

Yes! The answer is yes! Please wash your rice before cooking! You must and I mean must wash your rice before you cook it. The first step in this recipe is to wash the rice properly!

Rice is full of starch and washing raw rice thoroughly with warm water is going to remove most of the unwanted starch from the rice before cooking leaving you with cleaner rice at the end!

If you don’t wash your rice you are likely to end up with stinky sticky rice that has a nasty starchy taste.

Tips & Tricks

  • Heat the pot first then add the oil and throw the sliced garlic in. Fry for 2 minutes or until a light golden brown.
  • For long grain rice the ratio should be for every cup of rice you need double the water. So for this recipe we are using 2 cups rice, which will need 4 cups water.
  • For basmati rice the water should be half an inch above the level of the rice – easy right!

How to make Perfect Rice! 2 Types

Perfect fluffy and fragrant rice every time!
Servings 10 servings
Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Equipment

  • Sharp knife
  • Chopping board
  • Sieve
  • Lidded pot
  • Wooden spoon

Ingredients

Basmati Rice

  • 2 cups basmati rice washed
  • 2 garlic cloves sliced
  • 1 tsp sunflower or coconut oil
  • ¼ tsp salt
  • 3 cups cold water

Long Grain Rice

  • 2 cups easy cook long grain rice washed
  • 2 garlic cloves sliced
  • 1 tsp sunflower or coconut oil
  • ¼ tsp salt
  • 4 cups cold water

Instructions

  • Measure out your rice into the sieve and wash thoroughly under warm running water until the water is running clear and no longer grey and cloudy and set aside.
  • Now grab your pot and turn on the heat to high. While the pot is heating peel and slice your garlic. Add your oil to the pan allow to heat for 30 seconds or so and add your sliced garlic. Stir after a minute and add the washed rice to the pot once the garlic has turned a light golden brown.
  • Stir the rice together with the garlic and now add the salt stir and leave for 2 minutes. Stir again after 2 minutes and then add the water cover and leave on high until the rice comes to a rolling boil.
  • Once rice is boiling lift cover, stir and turn down to low and recover. The rice will be ready once all the water has gone and the grains should look white and fluffy.

Notes

Residual heat will keep cooking the rice in the pot so ensure you keep an eye on the pot and turn the heat off at the right time.
