Spicy Vietnamese Beef Noodle Salad

Refreshing and vibrant summer salad! Rice noodles, cucumber, carrots, lettuce and fresh mint and coriander topped with a spicy fish sauce vinaigrette!

Lemongrass Beef
- 1 large steak 400/500g
- 1 tbsp rapeseed oil or other
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp minced lemongrass
- 1 tsp coconut sugar
- 1 tsp black pepper
- 1 onion sliced
- 3 garlic cloves
The Noodle Salad
- 200 g rice noodles
- 1 cup julienne carrots
- 1 cup julienne cucumber
- ¼ cup chopped coriander
- 1 tbsp chopped mint
- 2 tbsp peanuts
Sweet and Spicy Fish Dressing
- ¼ cup fish sauce
- ¼ cup rice vinegar
- 2-3 thai chilli/birds eye chilli
- 2 tbsp lime juice
- 1 tbsp coconut sugar
- 1 minced garlic clove
Lemongrass Beef
Slice your beef into thin slices.
Slice 1 onion and mince 4 garlic into a bowl add the remaining marinade ingredients before stirring well and adding the sliced beef. Leave to marinate for 10 minutes minimum.
Heat oil in wok and add the entire contents of the bowl. Leave to fry for 3 minutes before turning. Leave to fry for a further 2 minutes before stirring. Medium beef is ready in about 7 minutes.
The Salad and Dressing
Add the noodles to boiling water in a saucepan and follow the packet instructions. Always rinse with cold water when cooked.
Shred the lettuce and julienne the carrots and cucumber. Roughly chop the coriander and mint.
In a jar add all the dressing ingredients, cover and shake well.
Plate up your salad separating each component as in pictures or in bowl throw all the veg and noodles together add a little dressing and toss plate up beside your lemongrass beef and enjoy!
TIPS - You can use any cheap cut beef steak for this recipe but its even more delicious with some chopped ribeye steak!
If you like your beef slices thin freeze your steak for about 20 minutes and then slice with a sharp knife!
Always follow the noodle pack instructions and just taste before draining if you are unsure.
Children Friendly adaptation -
- make a dressing with no chilli. Instead add 1 tsp extra or coconut sugar and some chilli flakes if your child tolerates mild chilli.
