Honey Lime Dressing

  • 1 tbsp lime juice
  • 1 tsp siracha

Instructions

Garlic and Lime Prawns

  • In a bowl add all the marinade ingredients. Add the washed, deveined prawns and combine well. Leave to marinate for 15 minutes.
  • In a pan on high heat add a knob of butter, once slightly melted add the entire contents of the bowl and fry for 2 minutes before turning. Fry for further 2-3 minutes until prawns are pink and curled.
  • Set aside and keep the butter.

The Salad and Honey Lime Dressing

  • Wash your salad and dry in the salad spinner. Cut cucumber and mango into desired chunks and set aside.
  • Add all the dressing ingredients to a jar and shake well.
  • Add the salad to a plate, top with mango and cucumber, drizzle over the honey lime dressing, top with prawns and enjoy!

Notes

TIPS - Do not overheat your pan before adding the butter you don't want to burn the butter. Add the prawns into a hot pan with butter and turn down if necessary.
Make sure your mango is nice and ripe!
