Garlic and Lime Prawns
In a bowl add all the marinade ingredients. Add the washed, deveined prawns and combine well. Leave to marinate for 15 minutes.
In a pan on high heat add a knob of butter, once slightly melted add the entire contents of the bowl and fry for 2 minutes before turning. Fry for further 2-3 minutes until prawns are pink and curled.
Set aside and keep the butter.
The Salad and Honey Lime Dressing
Wash your salad and dry in the salad spinner. Cut cucumber and mango into desired chunks and set aside.
Add all the dressing ingredients to a jar and shake well.
Add the salad to a plate, top with mango and cucumber, drizzle over the honey lime dressing, top with prawns and enjoy!
TIPS - Do not overheat your pan before adding the butter you don't want to burn the butter. Add the prawns into a hot pan with butter and turn down if necessary.
Make sure your mango is nice and ripe!
