This simple but delicious breakfast is an English Classic that the whole family can enjoy on a late Sunday morning.

Equipment

  • 3 non stick Frying pans
  • Grill
  • 1 small lidded pot
  • Rubber spatula
  • Tongs
  • a couple of bowls
  • 1 pyrex

Ingredients
  

  • 10 mushrooms sliced
  • 15 cherry tomatoes halved
  • 1 tin baked beans
  • 4 eggs  
  • 4 sausages
  • 6 smoked back or streaky bacon
  • 4 tbsp olive oil
  • mixed herbs
  • salt and pepper
  • paprika
  • cayenne pepper

Instructions
 

  • Preheat grill to 350ºF/180ºC/gas 4. Slice the mushrooms and set aside in a bowl. Now halve the tomatoes add 1 tsp olive oil, a generous sprinkle of pepper and mixed herbs and a pinch of salt and set aside.

  • Open the beans and empty the tin in your small lidded pot. Sprinkle paprika, cayenne, mixed herbs and the salt and pepper mix and cover and turn heat to low - stir and keep an eye on the beans throughout they tend to stick!
  • Pierce the sausages with a fork and put in oven for 15 minutes. Now line your oven tray with tin foil and put the rack on top and lay your bacon out and set aside for cooking later. Turn on 2 frying pans on high.
  • Add the tomatoes face down into frying pan 1 and turn down the heat to medium/low and leave to cook for 5-7 minutes - keep an eye out. Now add olive oil to frying pan 2 and add the mushrooms to be fried. Fry for 2/3 minutes before turning over with the tongs. Fry for a further 3/5 minutes before removing to pyrex. Remove the tomatoes when the bottoms have slightly charred but tomato is still solid and juicy.
  • Remove the sausages to pyrex and put in warming draw or bottom shelf of oven (keep an eye out). Add the bacon to the top shelf of the grill- bacon will take 10 minutes but keep an eye on it. Add oil to egg pan and crack eggs into oil immediately add salt and pepper. Cook for 3-7 minutes on high for desired cook. I like mine over easy which is about 6 minutes cook time - I put the lid on at the end to seal the tops! Turn your toast on....
  • Now remove bacon and pyrex and plate up with your beans and toast and enjoy!

Notes

Quick alternative: you can cook the bacon and sausage together in the same pan to save time but grilled bacon is superior!
