Lemon Pepper Chicken Wings
- 20 separate chicken wings drums and flats
- ½ cup plain flour
- 2 tbsp baking powder
- 1 tbsp corn starch
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cayenne pepper
- 1 tsp all purpose seasoning
- 1 tsp paprika
- 1 tbsp lemon pepper
Lemon Pepper Butter
- 100 g unsalted butter
- 2 tbsp lemon juice half the juice of a lemon
- 1 tbsp lemon pepper seasoning
- 1 tsp lemon zest quarter of a lemon
- 1 tsp honey
- 1 tsp parsley
Chicken Wings
Wash the chicken wings and dry thoroughly using a kitchen towel.
Separate your wings cutting them along the joint to separate to drums and flats.
To a bowl add the flour, cornstarch, baking powder, salt, pepper and cayenne pepper if using. Mix everything together.
To another bowl add the dry and prepped wings together with the all purpose seasoning, paprika and lemon pepper seasoning. Mix together until well combined and leave to marinate.
Coat the seasoned wings in the seasoned flour before either placing them in a pre-heated 180°C/350°F pot of oil to fry for about 10 - 12 minutes. Or 6 minutes frying and 8 minutes in the oven at 180°C.
Alternatively, you can lay them on a baking sheet and bake them at 180°C for 20-30 minutes.
Lemon Pepper Butter
In a small frying pan on medium heat add the butter and allow to melt a little before adding the lemon juice, zest and seasoning.
Mix everything together before adding the honey and some chopped parsley while continuing to stir.
Once all the butter has melted and everything is well combined it's ready - usually about 3 minutes.
In a large metal bowl add your cooked wings and butter and tossed until well combined!
TIPS -
- Separate your wings into drums and flats for a better cooking experience. The wings will cook faster and produce a crunchier finish.
- Do not over season you want the lemon pepper season to shine through and not be overwhelmed with other flavours.
- Marinate the chicken wings overnight to allow the marinade to penetrate through the chicken skin.
COOKING IN OVEN -
- Cook in the oven at 180 °C for 30-40. The wings should be a light golden brown colour.
COOKING IN OIL/FRYING -
- In a deep heavy pot heat some sunflower oil until 180°C/350°F.
- Fry the chicken wings in batches of no more than 10 to avoid over crowding or cooling the oil too much.
- Fry the wings for about 10 minutes or until 180°F /82°C if you have a meat thermometer.
