Super Spicy Mango Habanero Chicken Wings

Homemade Mango Habanero Hot Sauce
- 1 cup alphonso mango
- 4 habaneros read notes
- ¼ cup orange juice
- ¼ cup water
- juice of 1 lime
- 3 garlic cloves
- thumb size piece ginger
- ½ cup white wine vinegar
- 2 tbsp honey
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp paprika
Chicken Wings
- 20 chicken wings flat and drum
- 1 tbsp baking powder
- 1 tsp corn flour
- ¼ tsp garlic powder
- ¼ tsp cayenne pepper
- ¼ tsp paprika
- ¼ tsp pepper
- ¼ tsp salt
Mango Habanero Wing Sauce
- 1 tbsp unsalted butter
- 4 tbsp mango habanero hot sauce
- 1 tbsp orange juice
- juice of half a lime
- 1 tbsp honey
- salt to taste
- pepper to taste
Homemade Mango Habanero Hot Sauce
To a blender add the mango nectar, fresh orange juice, lime juice, garlic, ginger and habaneros - see note about the seeds.
Blend until completely smooth and then pour into a saucepan and turn heat to low. Leave and allow to come to a slow simmer.
When simmering add the vinegar, honey, salt, pepper and paprika to taste. Stir and leave on low for about 15 minutes or until the colour has darkened and the texture has changed.
Turn off the heat and leave to completely cool before transferring into an airtight glass container.
Chicken Wings
In a bowl add cornstarch, baking powder and the chicken wing seasonings and stir everything together.
Add the flour mix to the wings and mix well. Place the wings on a baking rack sitting in a baking tray.
Bake in a pre-heated oven at 180°C for 45 minutes for extra crispy delicious wings.
Mango Habanero Wing Sauce
In a frying pan on medium heat add the butter and melt halfway, add the mango habanero hot sauce, orange and lime juice and stir until combined and smooth.
Finally add the honey, salt and pepper while stirring. When completely combined and smooth turn off heat.
Once the wings are done add to a metal bowl add the wing sauce and toss until coated.
CHILLI CONTENT -
- I love spice and chillis and can tolerate high levels of spice. I have used 4 scotch bonnet for this recipe.
- Please use only 1-2 if you like spice but not at super spicy levels.
- Just be mindful of how hot habaneros and scotch bonnet chillies are and use the right amount for your taste.
- Additionally, definitely remove the seeds if you cant take hardcore spice. I deseeded 3 chillis fully and left 1 with seeds in for extra kick!

TIPS -
- Spray the baking rack with a neutral oil before placing the wings on the rack.
- Season the wings and sauce to your taste you can always adjust the sauce just give it a try.
