Chilli and Lime Chicken Wings

Equipment

  • Tongs
  • Small frying pan
  • Sharp knife
  • 2 Metal bowls
  • Chopping board

Ingredients
  

Chicken Wing Coating

  • 500 grams chicken wings about 20 separate wings
  • 1 tbsp corn flour
  • 1 tbsp rice flour
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • ½ tsp dried garlic
  • ½ tsp black pepper
  • ¼ tsp salt

Chilli & Lime Glaze

  • 25 grams butter
  • ¼ cup honey
  • 1 scotch bonnet/habanero chilli
  • 2 garlic cloves minced
  • 1 lime juice and zest of 1 lime
  • ¼ tsp paprika
  • pinch of salt
  • pinch of black pepper

Instructions
 

Chicken Wings

  • Wash and prep your chicken wings by separating the drums from the flats with a sharp knife or meat cleaver and remove the wing tip.
  • To a bowl add the flours and seasonings for the coating and mix well.
  • Add the dried and prepped wings to the bowl and toss or use your hands to coat the chicken wings well.
  • Add the wings to your air fryer basket and drizzle on 1 tablespoon of sunflower or vegetable oil. Close the air fryer and set to 200°C for 20 minutes.
  • Halfway be sure to open the air fryer and give the basket a toss to ensure even cooking.

Chilli and lime Glaze

  • Using a grater collect the zest of one lime, when done cut the lime in half, juice and set aside.
  • In a small saucepan over medium heat add the butter and allow to melt slightly before adding the chilli and garlic. Sauté for 30 seconds to 1 minute to soften but not brown any of your ingredients.
  • Then add the lime juice, zest and honey and whisk on low heat for 1 minute.  Add the salt, pepper and paprika and taste. 
  • The sauce is ready when it is slightly thickened and has a shiny appearance.
  • When the wings are done add to a large metal bowl add the glaze and toss well to coat.

Notes

TIPS -
  • Wash your chicken in lemon juice and or vinegar to remove the slimy coating and any strong odour from the chicken.
  • When cooking the glaze keep the heat low to ensure you dont burn any of the ingredients.
  • Sprinkle with some optional chopped coriander for extra fresh fragrant flavour!
