15 Minute Fried Rice

Equipment

  • Sharp knife
  • Chopping board
  • Spatula

Ingredients
  

  • 2 cups pre cooked rice day old at least
  • 1 cup small prawns
  • ½ cup peas
  • 1 spring onion
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ½ tsp white pepper
  • 1 tbsp sunflower oil

Instructions
 

  • Measure out the peas and prawns and set aside in individual bowls. Wash and chop the spring onion and set aside. Measure out the spices and condiments at this stage too.
  • Put the wok on the stove on high and allow to heat for 5 minutes before adding the sunflower oil. Once oil is smoking crack the eggs into the oil and begin using the spatula to separate and cook the eggs. Do this for about 3 minutes or until the egg is cooked and separated enough.

  • Now add the spring onion and peas and fry for 2 minutes before adding the prawns and half of the soy, sesame and white pepper. Distribute the condiments throughout the wok and then add the rice.

  • Use the spatula to combine the rice with the ingredients and flatten out any clumps of rice. Now add the remaining soy, sesame and white pepper and continue to mix the rice ensuring every part is getting fried and mixed with the other ingredients. Do this for the final 5 minutes and you are done!
